Gingerbread baking at MigAid’s refugee shelter

As the smell of gingerbread fills the hotel, we can feel the magic of the past and the joy of the present, that Christmas is truly a celebration of love, joy and togetherness.

These children are spending their second Christmas away from home. Often, they are also away from part of their family. 🥺

Ingredients:
For the dough.
50 g butter (or margarine)
60 g brown sugar
125 g honey
250 g fine flour
1 packet baking powder
1 teaspoon of baking soda
1 tsp cinnamon
1 teaspoon ginger
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon allspice
1 lemon zest from 1 lemon
1 orange peel obtained from oranges
1 egg
For the garnish
120 g icing sugar
1 egg white
Preparation
For the dough
Melt the butter, honey and sugar in a saucepan – all the ingredients at once – and leave to cool in a cold water bath.
Mix the flour, baking powder, baking soda, spices and grated peel in another bowl.
Mix a whole egg into the cooled honey mixture and then mix with the flour mixture.
Refrigerate for 5-12 hours.
Line baking trays or pans with baking paper.
Roll out the dough to a thickness of 3 mm on a floured surface, cut out the dough into different shapes and place them on the baking trays, making sure they are not too big.
Bake in a preheated oven at 200 °C for 7-8 minutes.
Allow to cool after baking and decorate with icing, whipped from icing sugar and the white of an egg, then pipe the decoration onto the figures from a piping bag and leave to dry.
