Ingredients:
For the dough.
50 g butter (or margarine)
60 g brown sugar
125 g honey
250 g fine flour
1 packet baking powder
1 teaspoon of baking soda
1 tsp cinnamon
1 teaspoon ginger
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon allspice
1 lemon zest from 1 lemon
1 orange peel obtained from oranges
1 egg
For the garnish
120 g icing sugar
1 egg white
Preparation
For the dough
Melt the butter, honey and sugar in a saucepan – all the ingredients at once – and leave to cool in a cold water bath.
Mix the flour, baking powder, baking soda, spices and grated peel in another bowl.
Mix a whole egg into the cooled honey mixture and then mix with the flour mixture.
Refrigerate for 5-12 hours.
Line baking trays or pans with baking paper.
Roll out the dough to a thickness of 3 mm on a floured surface, cut out the dough into different shapes and place them on the baking trays, making sure they are not too big.
Bake in a preheated oven at 200 °C for 7-8 minutes.
Allow to cool after baking and decorate with icing, whipped from icing sugar and the white of an egg, then pipe the decoration onto the figures from a piping bag and leave to dry.
